Coconut Lime Rice
Coconut Lime Rice

Ingredients
  • 2 cups rice
  • 1 13.5 oz. can light coconut milk
  • 1 cup water
  • 1 cinnamon stick
  • ¼ tsp. salt
  • zest of 1 lime
  • 2 tbsp lime juice
  • ½ cup unsweetened, shredded coconut
Instructions
  1. Combine rice, coconut milk, water, cinnamon stick, and salt in rice cooker
  2. While rice cooks, add shredded coconut to dry pan and toast, stir, about 3 minutes
  3. Once rice is done add lime zest and juice, Fluff with fork. Let stand 10 minutes
  4. Sprinkle toasted coconut over each serving
