Pretty in Pink Beet Burgers

  • 2 cups cooked brown or white rice
  • 1 cup finely diced or grated roasted beets
  • 1 Tbsp fresh parsley chopped fine
  • 1 Tbsp fresh dill, chopped fine
  • 1 15-ounce can white beans, drained and rinsed
  • 1 Tbsp lemon juice
  • 1 egg (or egg replacer)
  • 2 oz crumbled cheese (or soy cheese) of choice, I used a mix of parmigiano & feta
  • Salt and freshly ground pepper
  • 2 Tbsp extra virgin olive oil, as needed
  1. Pre-heat the oven to 375 degrees.
  2. Combine the rice, beets and herbs in a large bowl.
  3. Purée the beans with the lemon juice and egg in a food processor.
  4. Add it into the bowl with the rice and beets.
  5. Add the cheese, salt and pepper, and mix the ingredients together.
  6. Moisten your hands and form 6 patties.
  7. Heat 1 Tbsp. of the oil at a time in a heavy skillet
  8. Brown the patties on one side for 4 minutes.
  9. Line a cookie sheet with parchment paper or spray with cooking spray
  10. Place each patty browned side up on cookie sheet
  11. Sprinkle a little shredded cheese on top
  12. Place in the oven for 12 minutes.
  13. Serve like a burger - lettuce & tomatoes.
  14. I added chipotle mayo to it.
